Course aim
This course provides skills in following and implementing Food Safety in the Retail or Hospitality food workplace.
This course satisfies legislation where licensable food businesses are required to have a Food Safety Supervisor (e.g., Qld Food Act 2006).
Legislation may differ between states and territories.
Course outline
If you or your staff handle or prepare food, the Australia New Zealand Food Standards Code states that you, as the Supervisor, must have undertaken the Food Safety Supervisors course! It is also requirement of your local council for all those who operate a food outlet. This course will equip you with the skill and knowledge to apply good hygiene practices and to handle food safely during the storage, preparation, display, service and disposal of food and the ability to follow predetermined procedures as outlined in an organisation food safety program – a requirement by your local council to operate a food outlet.
THE COURSE CONSISTS OF: SITXOHS002A - Follow workplace hygiene procedures This unit describes the performance outcomes, skills and knowledge required to apply good hygiene practices within a range of service operations. It requires the ability to follow predetermined procedures, identify and control simple hazards and take particular hygiene measures to ensure the non contamination of food and other items that might put customers, colleagues and self at a health risk. 1) Follow hygiene procedures and identify hygiene hazards. 2) Report any personal health issues. 3) Prevent food and other item contamination. 4) Prevent cross contamination by washing hands. SITXFSA001A - Implement food safety procedures This unit describes the performance outcomes, skills and knowledge required to handle food safely during the storage, preparation, display, service and disposal of food within a range of service industry operations. It requires the ability to follow predetermined procedures as outlined in an organisation food safety program. 1) Implement procedures for food safety. 2) Store food safely 3) Prepare food safely 4) Provide safe single use items 5) Maintain a clean environment 6) Dispose of food safely.
HOW THE COURSE IS DELIVERED On-line: The course is completed by logging into the Student Area login on the Axiom College website using a username and password provided by the college when you enrol. Students then access their reading material in the Student Area, print and complete assessments and send to the college for marking. If you require any assistance, a trainer can contact you to provide the support you need or answer any questions you may have to assist with your successful completion. Classes also available.
ACCREDITATION The course is a requirement of the Australia New Zealand Food Standards Code for all supervising staff who handle food and supervise staff in handling food and addresses the key requirements of the National Food Safety Guideline Standard GFSBFSPA Follow basic food safety practices.
BACKGROUND Food safety is nationally legislated by the Food Standards Australia New Zealand Act 1991 which operates of a statutory authority known as Food Standards Australia New Zealand. The Australia New Zealand Food Standards Code (the Code) developed by this authority contains an individual standard for food safety practices. Each Unit of competency complies with the legislative requirements for food safety and safe food handling practices as outlined in the Code. Safe food handling practices are based on policies and procedures outlined in an organisation food safety program. The program and its procedures would normally be based on the hazard analysis and critical control points (HACCP) method but this unit can apply to other food safety systems.
